Spring Beauty (Claytonia virginica)

A harbinger of spring, this delicate wildflower graces the woodland floor with its loose clusters of pinkish-white flowers.  It grows from an underground tuber like a small potato that has a sweet, chestnut-like flavor. Native Americans and colonists used them for food.  The grass-like leaves are 4-6 inches high before they fall into dormancy in late spring.
