Helianthus tuberosus, also called Jerusalem artichoke, sunchoke or sunroot, is a native sunflower often found growing in fields, moist thickets, forest margins and along roadsides. This tall, bushy perennial will enliven the backdrop of any sunny garden with its countless bright yellow blooms that attract bees, butterflies and songbirds. Best yet, its tubers are edible for humans! Drought, dry and poor soil tolerant. Be sure to give this edible plant plenty of room to spread as it seeds freely and spreads by rhizomes.
